Brown Sugar Oatmeal Muffins

I love making muffins once in awhile.  They make a perfect breakfast for the on - the - go people.  And, it is healthy too.

Ingredients:
(1) cup all purpose white flour
(1) cup quick cooking oats
(3/4) cup of brown sugar
(1) teaspoon of baking powder
(1) teaspoon of baking soda
(1/4) teaspoon salt
(1/2) teaspoon cinammon
(3/4) cup skim non fat milk
(1/3) cup of cooking oil
(3/4) cup shredded coconut (optional)
(1) large size egg

DIRECTIONS:
Put in all the dry ingredients together - the flour, oats, brown sugar, baking powder, baking soda, salt and cinnamon.  Next, add in the coconut.  Next, add in the wet ingredients - the oil, milk, and egg.  Next, use an electric mixer and mix everything well together.  When the batter is done, it might not look as appetizing it might look brown and gloppy.  Line the muffin pan with cupcake liners.  Spread the batter out evenly onto the cupcake liners.  Put it into a preheated oven at 375 degrees for 15 minutes until the toothpick tests done.  These muffins will turn out so aromatic...the coconut smells amazing!!!  This muffin is nice and dense and filling.  I hope you will give this one a try.
