Here is a delicious and easy soup to prepare perfect for a cold day. Here are the ingredients.
Ingredients:
(2) cups of frozen green peas
(1) red onion (I used the food chopper to chop the onion finely)
(1) can of beef broth (use vegetarian broth if you are vegetarian)
(1) bag of Sweet Butter Lettuce Blend salad mix
(2) tbspns butter
(1 1/2 ) cups water
(250) mL whipping cream
salt and pepper to taste
DIRECTIONS:
In a pot, start off by melting the butter. Once the butter is melted, put in the onions. Let it sizzle for a few minutes and let the aroma come out. Next, add the green peas. Next, in goes the can of broth. Finally, put in the entire bag of lettuce. Pour the water ontop of the lettuce. Let everything bubble up and have the lettuce cook and wilt. Add the whipping cream last. We do not want to cook the whipping cream. Give it a stir and turn off the heat. Next, laddle the soup into a blender and hit the liquify butter. Blend until you see no more big chunks. Repeat this step until all your soup is done. Be careful not to overfill the blender or else it will explode as you blend it. To serve, place the soup into a huge soup bowl and let your family help themselves. You can garnish it with a little bit of mint. Serve this soup with some tortilla chips or garlic toast.
