These muffins are really easy and delicious to make at the comfort of
your own home. They have the fresh smell of lemon and strawberry which
seems to be the perfect combination. They make a great on the go
breakfast!!! So let's get started with the ingredients.
Ingredients:
(1 1/4 ) cup all purpose flour
(5 or 6) very large fresh strawberries (or use frozen)
(2 1/2) tsp baking poweder
(1/2) tsp salt
(1) cup quick cooking oats
(12) cup of white granulated sugar
(1) egg lightly beaten
(1) cup milk
(1/2) cup butter melted
pure lemon extract to taste
Directions:
In the food processor, chop the strawberries. Next, melt the butter in
the microwave at 15 seconds intervals. It shouldn't take that long to
melt the butter. Next, mix all the dry ingredients. Next, in goes the
rest of the wet ingredients. Mix well until all combined. For the
lemon extract, add as many drops of it into the batter as you desire.
Next, put the batter into a lined muffin tray. Put them in a preheated
oven at 425 degrees for 15-18 minutes until the muffins tests done. The
batter that I had made 15 muffins. These muffins should be enjoyed
within 2-3 days or else they will go bad. This is because there are no
other added preservatives in this product. But, these are so delicious
it won't last very long.
