Tapioca/Sago Dessert

This recipe was an experiment in my Kitchen.  I love it when Tapioca dessert is available at a Chinese Restaurant where I live in Calgary, Canada as a dessert.  Less and less restaurants are making desserts like this where I live.  You can serve it hot or cold.  I like this one cold.  When you buy this Tapioca in the grocery store, some packages may call it SAGO but it is the same thing.

Ingredients:
(1) cup of dry Tapioca pearls
(1) can of coconut milk
(2) cups of Almond Milk

DIRECTIONS:
In a large pot, bring a pot of water to a boil.  Place in the dry Tapioca pearls and start cooking.  Cook for around 15 minutes.  When you first put in the Tapioca, they are snow white Color.  As you boil it, it will turn clear, into gel like look.  After 15 minutes, turn off the heat and cover the pot with the lid.  Let the steam cook the pearls for another 15 minutes.  Also, during the cooking process, you may need to add more water because the water will get starchy from the Tapioca.  You MUST keep an eye on this as you cook this because the Pearls will stick to the pot.  After steaming the pearls, take the pot off the heat.  Let it sit for another 10 mins.  Afterwards, drain the tapioca and rinse with Cold water.
In a serving bowl, place the cooked Tapioca pearls.  Pour in the Coconut Milk.  Then, top it up with the Almond Milk and give everything a good stir.  You can chill this for a few hrs before serving to make it a Cold Dessert.  I hope you will give this Asian style dessert a try.  I sprinkled on a dash of cinnamon for decoration.
