This is one of my favorite week night recipe after a tiring day of Work. It is using pantry friendly recipes. However, this is in no way a traditional Chinese recipe. But it is very comforting if you are in the mood for a quick fried rice and if you have some left over rice in the fridge.
Ingredients:
some left over, cold cooked rice
(1) can of chicken breast meat (juice reserved)
(1) can of canned ham meat
(1) can of corn
mixed vegetables
(2) eggs, scrambled
minced garlic
Orange flavored soy sauce (or regular soy sauce). You can season as desired.
minced Chili sauce
salt and pepper
cayenne pepper
garlic powder
onion powder
(1/4) cup of water to mix a spoon of Chicken stock powder.
DIRECTIONS:
Preheat the frying pan. First make the scrambled eggs. Brushing the eggs aside, put in the cold rice. Then, pour in the Chicken stock powder water. Using your spatula, squish down the rice until there are no lumps and until it is softened. Mix it well with the eggs. Next, add in the canned chicken, ham and corn. You do not have to drain the cans it will help add flavor. Or depending if you know how watery the brands are you may have to drain it. My brand of ham and corn I used does not have much water. Next, add in the dry spices. Next would go in the mixed vegetables. Then, add in the minced garlic, chili sauce and the soy sauce. Mix everything well together in the pan until it is heated thru. Be careful you may have to lower the heat to the pan or the rice will burn and turn black and we do not want that. Next, you can finally serve when it is all mixed and ready.
