This is a very aromatic soup to make and it is made in the Slow Cooker. The Chicken Bacon in the recipe makes the dish even healthier than pork bacon. I found the Chicken Bacon at Walmart so if Chicken Bacon is new to you, you can try to find it at Walmart.
Ingredients:
(8) slices of chicken bacon
(1) red onion chopped
(1) large sweet potato diced
(1) 900mL box of chicken broth
(1) can of lentils
(1) can of whole tomatoes with juices
DIRECTIONS:
Dice the bacon and onions into small bits. Brown the bacon and onion in a pan. Drain and wash the can of lentils. Peel and chop the sweet potato. When everything is chopped put everything into the Slow Cooker. Put in the potatoes, bacon and onion, chicken broth, lentils and the can of tomatoes. Put on low heat for 6-8 hrs until dinner is ready to serve. As the soup is cooking, you can squish down the tomato pieces if you like and the sweet potatoes as well. The soup will turn into a nice red color. This soup is perfect for the days if you are feeling unwell or in the mood for soup. Serve with some crackers or garlic bread.
