Mini Pizzas

On the day that you do not feel like making a frozen pizza, you can try this recipe.  Also, this is great on the days you feel like eating some finger food.  Heres the recipe.

Ingredients:
(1) standard size package of English muffins which is pack of 6 split in half
(1) can of sliced pineapple rings (juice reserved)
Italian seasoning
left over roast beef (any type of meat is good)
(2) cups of shred cheese
(1) small can of tomato paste

DIRECTIONS:
Split the English muffins in half and arrange on a baking pan.  Spray it down with some cooking oil.  Bake into preheated oven at 375 degrees for 5 mins.  In a small bowl, pour in the reserved pineapple juice.  Mix in the tomato paste and sprinkle in some Italian seasoning.  This is our pizza sauce.  Next, we chop up the left over roast beef or any type of meat that you like.  Spread on the tomato sauce onto each English muffin.  At first, it might seem like a lot of sauce but the English muffin would soak up the sauce as we go so the amount is just right.  Next put on the meat.  Then, top each English muffin off with a Pineapple ring.  The particular can that I had had 10 slices so 2 pieces of English muffin would miss out.  Im sure there is some people in your party that don't care for Pineapples.  Next, sprinkle on the cheese.  Bake them at the preheated oven at 375 degrees for 15-20 mins until everything is nice and golden brown and bubbly.  I hope your family will enjoy this delicious pizzas.
