Red Wine Chicken + Gravy

Here is an elegant dinner that I made for Valentines Day 2012.  You Can make this for any special occasion that you like.

Ingredients:
(4) boneless skinless Chicken breasts
(1) cup of red cooking wine
(1) cup of brown sugar
(2) tbs of honey
salt and pepper to taste
For the Gravy:
wine from the marinade
(1) chicken bouilion cube
(2) tbs of butter
(2) tbs flour

Directions:
In a bowl, mix together the sugar, the wine and the honey.  Mix well.  Put the chicken into a marinating container.  Mix in the salt and pepper.  Pour the wine mixture into the chicken container.  Cover the container to marinate for at least 4 hrs.  After marinating and when the dinner is ready to be made, put the chicken onto a heated grill.  If you do not have a grill you can bake it in the oven for 350 degress for 30-35 minutes until chicken is done.  This meal is meant to be fast so I recommend you to use your grill.
For the gravy, in a pot, put one cup of water and the boulion cube to a boil until the cube dissolves.  Once the bouilion cube is dissolved, we add the red wine to it.  Now we have to prepare the thickener for the gravy as the red wine mixture boils.  In a small cup, mix in 2 tbs of butter and 2 tbs of flour.  Next, microwave it in the microwave for 15 second intervals until the flour and butter is combined.  If it turns too liquid, add in a bit more flour.  When this mixture is ready, stir it into the wine sauce in the pot.  The process happens very fast and the liquid mixture should all thicken together very quickly.
The gravy turns into a nice, thick pink color perfect for Valentines Day!!!  It is also very good taste and fancy.  I served this meal with some mashed potatoes and vegetables.  I hope you will give this recipe a try.
