Pastor tacos

Here is a delicious Taco recipe that is a little bit different.  I discovered this type of taco when I went to a Food Truck here in Calgary.  Before I never knew about this type of taco before.  Basically, it is a pork taco marinated in pineapple juice and spices.  Heres the ingredients.

INGREDIENTS:
(1) 2LB piece of pork roast
(1) cup of pineapple juice (No Sugar added)
salt and pepper to taste
garlic and onion powder to taste

SPICES:
Choice 1 - you can use a packet of taco seasoning.  I prefer extra hot one.
Choice 2- Do a blend of:

- chili powder
- cocoa chili powder
- cumin
- cayenne pepper 

DIRECTIONS:

In a mixing bowl, place the piece of pork roast.  Rub on the salt and pepper and the garlic and onion powder.  Next, sprinkle on the spices from the 2 choices above.  I love using the cocoa chili powder.  It adds a totally different dimension to your Mexican dishes!!! I add it to all my Tex Mex dishes these days.  As usual for the spices, add as much as you like per taste.  When the pork is fully rubbed with the spices, place the pork into a plastic bag.  Pour in the Pineapple juice.  If you have the time, marinade it for at least 2 hrs or overnight.  If not, you can immediately place the pork into the slow cooker and pour the Pineapple juice over top.  The Pineapple juice acts as a natural tenderizer and makes the meat softer.  Switch the slow cooker to low heat, for 6 to 8 hrs.  When the time is up, take 2 forks, and use the same method that you will use to make Pulled Pork sandwich and shred the meat.  Next, take your tortilla wraps or taco shells, and start assembling your tacos your favorite way.  Enjoy!!!
